Eating Healthy: Tofu Burger with Fresh Raw Ketchup

Forget the Hamburger Helper! This is a quick, delicious recipe that is a hit every time I make it. It takes only minutes to put together and you can vary it in any way you want. If you like mushrooms, add them. Want some spice, add a little cayenne pepper. Really, the sky is the limit. You can add your favorite flavors to this wonderfully textured burger. You will fall in love!

This is a super clean recipe. There are no undesirable ingredients. Everything is healthy and pure. When I prepare my burgers, I make sure that I use organic tofu. This way I am certain it has not been genetically modified and it is grown under the healthiest conditions. I try to use as many organic ingredients as possible. Organic is not always available for everything, but I do my best. This ensures my family is eating healthy and pure.

To add to the nutrient content and “clean” appeal of this recipe, I serve the burgers on Ezekiel buns. They are flour-less and made only from ground sprouted grains. They taste good and are the perfect compliment to this burger.

Ingredients:

  • 1/2 container firm or extra firm tofu, mashed
  • 1 yellow onion, diced
  • 3 green onions, diced
  • 4 tbsp buckwheat flour*
  • 2 tbsp garlic powder
  • 1 teaspoon mustard powder
  • 2 tbsp soy sauce
  • dash pepper
  • 1 tablespoon coconut oil for frying

Method:

Mix all ingredients in a large bowl. Combine everything well. Don’t be afraid to get in there and mix it well with your hands. Once everything is well combined, form about 4 good-sized burgers.

In a large skillet, fry patties in oil in a large skillet until brown and crisp. Turn them every few minutes to be sure they are cooking evenly. Burgers should be ready in about 10 minutes.

*Buckwheat flour can be made by processing buckwheat groats in a coffee grinder or Magic Bullet. Use 4 tablespoons of groats and process until they have a powdery consistency. This only takes about 20 seconds.

This recipe will make about 4 burgers. You can double the recipe using the entire container of tofu to make 8 burgers.

Garnish however you like. In addition to the sun-dried tomato ketchup, I like to add some avocado or kale and maybe fresh sliced tomato. So many combinations work well here.

Sun-dried Tomato Ketchup

Ingredients:

  • 1 cup sun-dried tomato, soaked, 1/4 c reserved water
  • 1/4 cup raisins, soaked
  • 1 T Italian Seasonings
  • 1/4 tablespoon chopped onion
  • 1 clove garlic, minced

Method:

Combine ingredients in a blender until mixture is slightly chunky.
