Raw “Clean” Vegan Chocolate Chip Cookies

There is nothing like chocolate chip cookies. And, as a “clean” vegan (meaning that in addition to eliminating animal products from my diet, I have also eliminated refined sugars, white flour and processed anything), I am always looking for a good recipe that fits my strict criteria!

I changed my diet initially for health reasons. I was diagnosed with breast cancer and desperately wanted to improve and support my health in any way I could. I turned to diet and began eliminating all of the foods that I believed to be detrimental to my health. My rationale being that if I build my immune system and my health as much as possible, I would be stronger to fight off disease. In the process, I lost about 40 pounds and look and feel better than ever!

Anyway, back to the cookies! A friend of mine sent me a recipe for raw chocolate chip cookies. I tweaked it a bit and really like what the end result was! So, I am sharing it with you. The dough is made up of primarily nut flours, oat groats and cacao nibs. All super healthy ingredients with many health benefits.

If you are not familiar with cacao nibs, they are chocolate in their rawest, purest form. Nothing added. This is the chocolate that is touted by health professionals for its health benefits. Once you process and add milk, sugar and other uglies to chocolate, the benefits are lost. Cacao nibs are filled with antioxidants that are beneficial to our health.

Make the nut flours by simply measuring out the nuts (raw and organic are best) and processing them in a magic bullet or blender until they are in powder form. Do the same with the oat groats.

Formed and ready to firm up in the fridge – No Baking!!

Here is the recipe for Raw “Clean” Vegan Chocolate Chip Cookies:

Ingredients

  • ½ cup coconut flour
  • ½ cup almond flour
  • ¾ cup cashew flour
  • ¾ cup oat groats
  • ½ coconut oil, melted
  • ¼ agave nectar
  • 2 teaspoons vanilla extract
  • ¼ cup raw cacao nibs

So Yummy! Enjoy!

Method

Mix together the nut flours and oat grouts until well blended. Add the coconut oil, agave and vanilla extract and mix until a dough is formed. Fold the cacao nibs in and blend well.

Form the dough into small cookies. Place on a piece of parchment paper on a small cookie sheet or plate. Place in the refrigerator to firm them up a bit (about 30 minutes). Enjoy these yummy cookies with a nice cup of green tea!
