Here are a few easy vegetarian recipes that are healthy for you. The instructions are simple and with just a little bit of effort, you can create a fabulous, tasty meal.
Avocado Tomato Salad
This is one of the simplest salads to make and it is extremely delicious!
Ingredients
- Dash of sea salt
- 1 cup vegan mozzarella or feta cheese, shredded or cubed
- 1 large ripe tomato, diced
- 1 avocado, diced
- ¼ c red onion, diced
- Several tablespoons organic extra virgin olive oil
- ½ cucumber, diced
Method
Mix the cheese with various vegetables, drizzle with olive oil and sprinkle with salt and then serve it immediately. Enjoy!
Barley Soup
A perfect soup that is great to eat in the cold weather. This is a healthy vegetarian recipe that will warm your soul.
Ingredients
- 6 cups vegetable stock
- 2 cups water
- 1½ pounds of fresh organic tomatoes, peeled, seeded, and chopped
- 1 cup pearl barley
- Sea salt
- Black pepper
- Fresh herbs, minced (optional)
Method
For this simple vegetarian recipe, combine stock and water in the pot, bring to boil over high heat, and stir in everything but the herbs. Return to boil, reduce heat to low, stir well, and cover. Simmer, stirring occasionally, until barley is tender – about 45 minutes. Sprinkle optional herbs on top and serve.

Cole Slaw
An ideal summer salad for a picnic. It is usually made with fatty mayonnaise, but here is a vegan version. Use Follow Your Heart Vegan mayonnaise for a healthier version.
Ingredients
- ¼-½ c fresh herbs (parsley, dill, and/or cilantro)
- 4 cups red and/or green cabbage, shredded
- 1 carrot, finely chopped or shredded
- ¼ cup white and/or green onion, minced
- 1 red bell pepper, finely chopped
- ¾-1 cup Follow Your Heart – Grapeseed oil mayonnaise
- Sea salt and pepper
Method
Combine the vegetables and herbs, then toss with the mayo. Taste the Cole slaw and add more salt/pepper if needed. Cover and refrigerate for at least one hour before serving. A great, quick vegetarian recipe.
Eggplant Caviar
A thick eggplant dip. This is great with crackers or breads. Choose whole grain versions with identifiable ingredients!
Ingredients
- 1 large eggplant
- 2 tablespoons organic coconut oil
- 1 tablespoon organic canned tomato paste
- 1 large onion, minced
- Sea salt
- 3 cloves garlic, minced
Method
Preheat in the oven to 400 degrees. Coat the eggplant in olive oil and add some sea salt. Roast the eggplant in a casserole for about one hour. Set it aside to cool. Cut it in half, scoop the filling out, and then chop or process until it looks similar to oatmeal. Meanwhile, heat the coconut oil over medium heat, add the onions and sauté, stirring often, until they turn soft and translucent – about 10 minutes.
Add the garlic and sauté a minute add the tomato paste and cook a minute longer. Add the eggplant and cook until it thickens. Season with pepper and sea salt and then serve. You might want to decorate it with a little olive oil and chopped parsley. Enjoy this wonder vegetarian recipe with some brown rice for a complete meal.
